Hearty Potato salad with bacon
Today gabs times a heartier version of the classic. These were "Gschwollne" and served a quick lunch was perfect. ;-)
For 2 persons (as garnish).
Ingredients:
8 small potatoes, waxy
1 / 2 (or 1 small) onion
50g diced bacon
25ml vinegar, as doyen of Hengstenberg
50ml water
1 shot oil
1 / 2 teaspoon mustard, medium hot pepper
salt 1 pinch of sugar
parsley Method: Wash the potatoes and
shell with even cooking. Cool slightly; with cold water, peel off by this, and cut into slices.
Slice the onion into small cubes. Mix with the bacon.
the vinegar, water, oil, mustard, salt, pepper, sugar, parsley and whisk together. Pour over the onions and bacon and well let stand.
the marinade over the potatoes and mix thoroughly.
